1973 Dalmore 30 Year Old Gonzalez Byass Sherry Cask

This whisky spent the majority of its 30 years in American Oak casks, before being transferred to European Oak casks for a 'finishing' period. The idea is to take different flavours from the wood which results in an overall more complex whisky.

Whilst sourcing Spanish sherry casks made from European Oak in addition to Bourbon casks made from American Oak is expensive for the distillery, it all becomes worth it 30 years later when the finished product is as good as this.

These are not 'any' sherry casks either. Gonzalez Byass have been making the finest quality sherry since 1835, so we can only assume they know a thing or two about sourcing top quality barrels.
